Spanish Quarantine Recipes!

These past few months have been a crazy time for everyone, regardless of your location in the country, or in the world! Although limitations have been lifted in many parts of the world due to the Coronavirus being contained, most parts of America are still practicing limited social interaction. In fact, in the Bay Area town where I live, most businesses are still closed, and, frankly, I haven't really been out of the house in about three months.


So that's left me with a lot of time at home to discover new hobbies! I'll be the first to tell you that I'm not a very good cook. My cooking skills before quarantine ranged from instant ramen to microwave popcorn, to basic omelets (most of which turned into scrambled eggs because I messed up).



On the other hand, my sister's a pretty decent cook. She's five years younger than me but definitely knows a thing or two around a kitchen, and has been baking from scratch practically nonstop for the past few months.


So how does any of this relate to Spanish? Well, there are a couple of Mexican and Spanish recipes we've been trying, and I wanted to share one of them here! First off, we made the Disneyland Churros recipe! If you hadn't heard, due to the whole quarantine-shelter-in-place thing, Disneyland decided to release their recipe for the churros sold at the parks. I have the recipe linked here! They're super easy for the whole family to make together—and of course, they're delicious!



Another recipe you've likely heard of before is for flan. Flan is a delicious and famous baked custard dessert topped with caramel, with origins tracing back to Mexico and Spain. It's easy and delicious, and here's a 4-ingredient recipe below that you can follow that will give you four servings (courtesy of AllRecipes):


Ingredients:

  • 1/2 cup white sugar

  • 1 1/2 eggs

  • 1/2 can sweetened condensed milk

  • 1/2 can evaporated milk

  • 1 1/2 teaspoons vanilla extract

Instructions:

  1. Preheat the oven to 350 Fahrenheit.

  2. In a pan over medium-low heat, caramelize the sugar until it's fully liquified. Carefully pour the syrup into a round glass baking dish, evenly coating the bottom and sides.

  3. In a different bowl, beat the eggs. Follow that by beating in the condensed milk, evaporated milk, and vanilla extract until the mixture is smooth. Pour this mixture into the baking dish, and cover with aluminum foil.

  4. Bake in the oven for 60 minutes, letting it cool completely afterward before touching.

  5. Carefully invert your flan onto your serving dish. It's now ready to enjoy!
